These Coconut Sweetie Cupcakes were made for a summer BBQ with friends and family. Coconut always makes me feel like I should be on a island somewhere drinking a pina colada ;) These cupcakes are made with a vanilla coconut cake and topped with cream cheese frosting. For the coconut lovers, I topped some of them with toasted coconut for a nice sun-tanned look!
